Mangrove Snapper Sandwich with Chunky Tartar Sauce

Ingredients

  • For the Chunky Tartar Sauce:
  • QP mayo
  • Dijon mustard
  • Kalamata olives
  • Dill pickles
  • Serrano pepper
  • Shallot
  • Pimento pepper
  • Lemon juice
  • Lime juice
  • Sea salt
  • White pepper and black pepper
  • For the Fish:
  • Mangrove snapper fillets
  • Salt and pepper
  • Heavy cream
  • Potato starch
  • Panko
  • Pecorino romano
  • For the Sandwich:
  • Hatch bacon
  • Bread
  • Government cheese

Instructions

  1. Mix all tartar sauce ingredients together — keep it chunky, not smooth.
  2. Season the snapper with salt and pepper. Double-dredge: potato starch, then heavy cream, then panko mixed with crushed pecorino romano.
  3. Cook the bacon first and save the fat. Fry the fish in the bacon fat plus avocado oil and butter at 320°F, flipping once.
  4. Toast the bread. Layer tartar sauce, two strips of bacon, the fried snapper, government cheese, and more tartar sauce.
  5. Cut in a triangle and eat immediately.
