Wahoo Two Ways — Ceviche & Dill Pickle Chip Encrusted Wahoo

Ingredients: Fresh Wahoo, dill pickle chips, habanero peppers, flour tortillas

Dish 1 — Wahoo Ceviche

Ingredients

  • Fresh Wahoo, cubed small
  • Meyer lemon juice
  • Lime juice (3:1 lime to lemon)
  • Salt
  • Habanero, seeds and all
  • Thai chilies
  • Kefir lime leaf
  • Elephant garlic
  • White onion
  • Cucumber
  • Fresh cilantro
  • Smoked dill pickle chips, to serve

Instructions

  1. Cube the wahoo small.
  2. Combine with lemon and lime juice, salt, habanero, Thai chilies, kefir lime leaf, elephant garlic, onion, cucumber, and cilantro.
  3. Let it cure, then serve with smoked dill pickle chips on the side.

Dish 2 — Dill Pickle Chip Encrusted Wahoo with Cardamom Curry Cream Sauce

Ingredients

  • Wahoo fillet
  • Salt and pepper
  • Green curry paste
  • Cornstarch and potato starch
  • Crushed dill pickle chips
  • Garlic
  • Habanero peppers
  • Cardamom
  • Cream
  • Fresh basil

Instructions

  1. Season the wahoo with salt and pepper, rub one side with green curry paste.
  2. Press on a crust of cornstarch, potato starch, and crushed dill pickle chips.
  3. Sear crust-side down until golden and crispy.
  4. For the sauce: cook garlic, habanero, and cardamom, add cream, and finish with fresh basil.
