White Marlin Two Ways — Tataki & Coffee Soy Poached

Ingredients: Fresh White Marlin, raspberries, coffee, scorpion peppers

Dish 1 — Coffee Cardamom White Marlin Tataki

Ingredients

  • White Marlin loin
  • Salt and pepper
  • Cardamom
  • Raspberries
  • Lime juice
  • Mint
  • Rice wine vinegar
  • Fish sauce
  • Gochujang
  • White onion
  • Soy sauce

Instructions

  1. Season the marlin loin with salt, pepper, and cardamom.
  2. Sear one side only, keeping the rest raw.
  3. Muddle raspberries with lime juice, mint, rice wine vinegar, and fish sauce; stir in gochujang.
  4. Slice the marlin, top with pickled raspberries and thin white onion, finish with soy sauce.

Dish 2 — Coffee Soy Poached White Marlin with Raspberry Gochujang Sauce

Ingredients

  • Coffee
  • Scorpion peppers
  • White Marlin
  • Raspberries
  • Lime juice
  • Mint
  • Gochujang
  • Hot honey

Instructions

  1. Brew coffee with scorpion peppers steeped in, then strain.
  2. Poach the marlin in the hot coffee.
  3. Reduce smashed raspberries with lime juice, mint, coffee, and scorpion peppers into a gastrique; stir in gochujang and finish with hot honey.
  4. Serve the poached marlin over a pickled raspberry salad with the sauce.
